Pan Grilled Chicken with Avocado and Red Onion Salsa

Quick and easy dish for week day meals and a wonderful entree for a dinner party.

Pasta with Creamy Avocado Sauce

This is a very tasty and healthy pasta dish. You can make the sauce in the time it takes to cook the pasta. You can even toss in your favorite seasonal vegetables, like broccoli, green beans, spinach, or asparagus before adding the sauce.

Pea Soup with Pear and Lobster

1. Pour out a glass of the white wine (as you only need 75ml for the soup), slowly sip it and relax for half an hour.

2. Melt the butter in a large pan and gently cook the leeks, celery, onion and garlic for 8-10 minutes until soft but not coloured, stirring occasionally. Add the peas and cook for a further 2 minutes.

3. Pour over the 75ml white wine and allow to simmer for 1-2 minutes, until completely reduced. Add the chicken stock and 3 of the mint sprigs. Bring to the boil, then reduce the heat slightly and simmer for 20 minutes.

4. While this is simmering, why not enjoy a second glass of the wine, what a good way to spend 20 mins.

5. Remove from the heat and blend to a puree. (Do so carefully as the soup will be very hot.) Pass through a fine sieve into a clean pan. Adjust seasoning to taste. 

6. Reheat the soup when ready to serve and garnish with cream, diced lobster, chopped mint leaves and pear slices.

These quanties make enough to create 6 normal portions, or 4 hungry people. Unusual, different, experimental - give it a go, great for a hot sunny evening as you sit and relax with a glass of wine.
