  1. These are probably the most difficult food to cook on a Barbie. The usual offering – including my own, very often – is burnt on the outside and raw in the middle, particularly if you have good, thick sausages. The trick is to keep the heat low. This increases the cooking time but at least they’ll be edible.
    Here are two other ways to prevent the burnt/raw offering:
    One is to cut them in half lengthways but not all the way through. Open and lay flat on the grill, skin side up.
    Another way to grill sausages is to parboil them first. In fact there is a great recipe that calls for boiling sausages in half water, half beer before you put them on the grill. To parboil first, drop sausages into boiling liquid long enough to tighten the skin. When you pull the sausages out the fat inside should be just starting to liquefy. Next, place the sausages on a hot grill over a medium low fire and finish cooking.
