Canarian Aloo Sag


  • 500g spinach, swiss chard (acelgas) or sping greens (colinas) - stalks removed and sliced into two inch strips
  • 500g canarian new potatoes - halved
  • 1 clove garlic - finely chopped
  • 2 tbsp olive oil
  • 2 teaspoons cumin seeds
  • 1 whole dried cayenne pepper
  • salt and pepper


    1. Boil the spinach/greens and potaoes
    2. Heat the oil and add the garlic and spices and cook for 1 minute
    3. Add the cooked vegetables and stir.
    4. Season to taste
    5. Turn the heat down and leave for 5 minutes to allow the flavours to be absorbed
