Pan Grilled Chicken with Avocado and Red Onion Salsa


  • 300g boneless chicken breasts
  • Marinade
  • 1 clove garlic, pressed
  • 20 ml lime juice
  • 30 ml olive oil
  • 1/4 tsp red pepper flakes
  • Salt
  • Salsa:
  • 1 avocado, firm but not hard 1/4 inch dice
  • 1 smalll red onion, chopped
  • 20 ml olive oil
  • 10 ml lime juice
  • Salt and pepper
  • 1 bunch coriander, chopped
  • Garnish:
  • Sliced red onion
  • Lime wedge
  • Shredded white cabbage



    1. Whisk marinade ingredients together and pour over chicken, marinate 20 minutes.
    2. Add oil and chicken to a hot heavy pan and brown on both sides, reduce heat and cook until juices run clear.
    3. While chicken is cooking, mix salsa ingredients together, season with salt and pepper, and stir in coriander.
    4. Serve chicken and salsa on individual plates garnished with red onion, lime and cabbage.
