Pea Soup with Pear and Lobster


  • 50g butter
  • 50g leeks, trimmed and diced
  • 50g celery, trimmed and diced
  • 50g onion, peeled and diced
  • 5g garlic, peeled and finely chopped
  • 500g frozen peas
  • 75ml white wine (a good Sauvignon i've found works best - but down to personal taste)
  • 750ml good chicken stock
  • 5 sprigs of mint
  • 50ml double cream
  • 1 cooked medium lobster, all meat removed from the shell and diced
  • 2 ripe pears, peeled, quartered, cored and sliced
  • Salt and freshly ground black pepper


  1. Now, this may sound like an odd combination - but it really works well, its a bit of a twist on an old pea soup recipe - that brings it right up to date 9and is a little bit flash, so a good one if you really want to impress)
    The soup can be served warmed up or cool if its a really hot day. The mix of flavours all come together so well and although you may not think it when reading through this recipe, I am really confident that you and who ever your making it for will really enjoy it.
