Spicy Vegetarian Burgers


  • 1tbs oil
  • 1 chopped onion
  • 1 grated carrot
  • Half a chopped green pepper
  • 1 minced garlic clove
  • Half teaspoonful chilli powder
  • 1 teaspoonful coriander
  • 2 x 15oz can of kidney beans
  • 2oz (50g) fresh wholemeal breadcrumbs


  1. Heat 1tbs oil in large saucepan. Add 1 chopped onion and stir. Cover and cook for 5mins stiring occasionally. Add 1 grated carrot , half a chopped green pepper and 1 minced garlic clove. Cook for 5 mins. Add half teaspoonful Chilli powder and 1 teaspoonful coriander. Stir 1-2 minutes then remove from heat. Mash with 2x15oz can kidney beans and 2oz (50g) fresh wholemeal breadcrumbs. Season. Divide mixture into burgers and coat with dried breadcrumbs. You can put on a tray and freeze them or cook 15-20mins 200c Gas mark 6.
