Super Sausage in marinade


  • 1/4 kilo pork minced
  • 1/4 kilo beef minced
  • 1 large onion diced finely
  • 1/2 garlic bulb diced very very fine
  • pinch cayanne ground pepper (I like a bite in mine, more like 1 teaspoon)
  • pinch sea salt (dependent on taste)
  • heaped teaspoon albahaca (basil)
  • 1/2 teaspoon black pepper
  • 1 teaspoon dijon mustard
  • juice of 1/2 lime + zest


  1. Easy as pie .....

    litterally put everything into a plastic bag and manipulate it ....squeeze out the air and tie a knot.
    Pop it in the fridge for a minimum of 4 hours, then take a tablespoon of the mixture and put it onto a sheet of cling film
    roll it into the desired sausage shape and knot the ends....

    Take your sausages and drop them into a pan of boiling water for a minute, or so, directly before cooking them on the bbq.
    Take the packages from the pan, snip off the end and squeeze the solid meat onto a plate. 
    Transfer to the bbq. They take just a couple of minutes to be ready, awesome ........
