Coconut Rum King Prawns - serves 4-6


  • 1 KG King Prawns
  • Caribbean Rum (dark)
  • Coco Liqueur (Malibu)
  • Garlic
  • Ginger
  • Diced onion
  • Red peppers
  • Lemon
  • Wedges


  1. Peel prawns leaving tail and cut down the spine to butterfly them. Dice onions peppers, grate ginger and crush garlic. In a hot pan add the prawns with diced onion, peppers, garlic, ginger, and lemon wedges. Stir fry for one minute. Add a good dash of rum and a dash of coco liqueur. Do not do near curtains, or stand directly over, as the flame is quite high!! Stir mixture for one minute and serve with a nice Captain Morgan and coke or red stripe.
